BBQ Chicken Pizza

BBQ Chicken Pizza
1 boneless, skinless, chicken breasts
1/4 c of sweet baby rays bbq sauce
Boboli Pizza Crust
Mozz cheese part skim

Steam chicken and shred. Mix BBQ sauce with chicken, smooth over pizza crust. Top with cheese. Bake until cheese is bubling at 350. Takes around 10 min.
Optional: Add a little chopped or sliced red onion, yum.

Place frozen chicken breasts in the crockpot and top with bbq sauce. Cook on low 6-8 hours. Shred chicken. This can then be used for BBQ Chicken Pizza or on bun for BBQ Chicken Sandwich.

BBQ Chicken Pizza

Ingredients:
1 stick light string cheese
3 oz. cooked boneless skinless lean chicken breast, chopped
2 tbsp. your favorite BBQ sauce with about 45 calories per 2-tbsp. serving, divided
1 high-fiber or whole-wheat pita
1 1/2 tbsp. finely chopped red onion
1 tsp. chopped cilantro
Directions:
Preheat oven to 375 degrees. Break string cheese into thirds, and place in a food processor or blender -- blend at high speed until cheese takes on a shredded or grated consistency. (Or just tear string cheese into pieces and roughly chop.) Set aside. In a small dish, toss chopped chicken with 1 tbsp. BBQ sauce. Set aside. Place pita on a baking sheet sprayed with nonstick spray. Spread remaining 1 tbsp. BBQ sauce onto the exposed side of the pita, leaving a 1/2-in ch border around the edge. Sprinkle evenly with shredded/grated cheese. Scatter saucy chicken over the layer of cheese, and then sprinkle with onion. Bake in the oven for 10 - 12 minutes, until pizza is hot. Top with cilantro, slice into quarters, and enjoy. YUMMMM!

Easy Barbecue Crispy Chicken Melts

3 tablespoons butter or margarine

1/2 cup Original Bisquick® mix
1/4 teaspoon pepper
1/4 cup milk
4 boneless skinless chicken breasts (about 1 1/4 lb)
1/4 cup barbecue sauce
1/2 cup shredded Cheddar cheese (2 oz)

1. Heat oven to 425°F. In 13x9-inch pan, place butter. Heat in oven 2 to 3 minutes or until melted.

2. In shallow dish, stir Bisquick mix and pepper. Pour milk into small bowl. Coat chicken with Bisquick mixture, then dip into milk and coat again with Bisquick mixture. Place chicken in pan.
3. Bake uncovered about 30 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
4. In small microwavable bowl, microwave barbecue sauce uncovered on High about 30 seconds or until warm. Spoon sauce evenly over chicken; top with cheese.
