1 lb lean (93/7 or better) beef
1/2 c diced onion
1 package of low sodium taco seasoning
10 oz can tomatoes with chilies - drained
1 can reduced fat crescent rolls
15 oz can tomato sauce
15 oz can black beans
1 c 2% shredded mexican cheese
Preheat the over to 375 degrees. Brown beef with onion, drain. Spray 13x9 pan with cooking spray. Unroll the crescent rolls and squish together to form a flat crescent crust on the bottom of the pan. Bake for 5 minutes and remove from the oven. Stir tomatoes, sauce, seasoning, and beans into the beef. Spread evenly over the crust and bake 10 minutes. Sprinkle with cheese and return to the oven until the cheese is melted, about 5 minutes.
Optional: Make with salsa chicken instead of beef. Place 2-3 chicken breasts in the crockpot, top with salsa - about a cup. Cook until tender. Shred with fork.
Beef Taco Bake

Serves 6 @ 6 pts
1 pound ground turkey
1 can tomato soup
1 cup salsa
1/2 cup skim milk
6 flour tortillas -- cut in 1" pieces
1 cup reduced fat cheddar cheese
In skillet, over medium high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk and tortillas and half the cheese. Spoon into 2 qt. shallow baking dish. Cover. Bake at 400º for 30 mins or until hot. Sprinkle with remaining cheese.
