Crockpot - Vegetable Soup

Slow cooker veggie soup
1 bag of frozen mixed vegetables
1 head of cabbage, chopped
3 c beef broth
1/2 c celery, chopped
1/2 small onion, chopped
1 can of diced tomatoes
4 c water
2 TB Parsley
Salt and Pepper

Chop Onion. Brown beef with onion. Chop cabbage and celery.
Mix all ingredients in crockpot and cook for at least 6 hours. I cook for 10-12 while I'm at work. Makes around 18 - 1 cup servings.

Optional - tastes good with one can of tomato sauce too.
