Weight Watchers: WW Core or 5.5 Flex Points
1/2 cup ketchup
1 1/2 tablespoons dijon mustard
1 pound ground sirloin
3/4 cup onion -- finely chopped
1/4 cup oatmeal
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
1 large egg
1. Preheat oven to 400 degrees.
2. Combine ketchup and mustard, stirring well with a whisk. Reserve 2 1/2 tablespoons ketchup mixture. Combine remaining ketchup mixture, beef, and next 6 ingredients (beef through egg) in a large bowl, stirring to combine.
3. Divide beef mixture into 4 equal portions. Shape each portion into a 4 x 2 1/2-inch loaf; place loaves on a jelly roll pan coated with cooking spray.
4. Spread about 2 teaspoons reserved ketchup mixture evenly over each loaf. Bake at 400 degrees for 25 minutes or until done.
Meatloaf
3 lbs lean hamburger
1 pkg lipton onion mushroom soup mix
2 eggs
3 T ketchup
1/2 sleeve crushed saltines
Mix all ingredients together, form loaf shape. Place in roaster sprayed with Pam. Add water to roaster, just enough to keep it from burning and drying out (this depends on pan, for mine I use about 1 cup of water). Top with a mixture of 2 T Ketchup and 1 T Country Bobs - spread over the top of the meatloaf. Cook 1 1/2 hour or until done at 350 degrees.
