Lemon and Garlic Grilled Chicken

Lemon and Garlic Grilled Chicken
Juice of 1 lemon, approximately 3 tablespoons
3 tablespoons olive oil
1 teaspoon minced garlic, about 2 medium cloves
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried oregano
1 pound chicken breasts (I usually cut really thick chicken breasts down to thin them out and make the pieces a little smaller so they absorb the marinade better)
Combine all marinade ingredients. Place chicken in a ziploc bag and pour marinade over chicken. Seal bag and place in fridge overnight. Grill (or cook in frying pan). Serve with sides of your choice or cut into bite sized pieces and add to desired recipe. Note: If you cut your chicken into smaller, bite-sized pieces and then marinate it, you can get away with only letting it marinate for 5 or 6 hours instead of overnight.
Often, I will double the marinade and chicken and grill it all up and freeze the extras to use later.

One Minute Salsa

One Minute Salsa
*Note: This salsa is unbelievably good with a couple diced avocados mixed in just before serving.

*Makes about 3 cups

1/2 small red onion, peeled and quartered
1/2 cup fresh cilantro leaves
1/4 cup drained jarred pickled jalapenos
2 tablespoons lime juice
2 garlic cloves, peeled
1/2 teaspoon salt
1 (28-ounce) can diced tomatoes, drained

In the bowl of a food processor (or a blender), pulse the onion, cilantro, jalapenos, lime juice, garlic and salt until coarsely chopped.

Add the drained tomatoes and pulse until combined. Don't overprocess in this step if you want your salsa to remain chunky - just give it a few good 1-second pulses until everything is mixed. Place the salsa in a fine mesh strainer or sieve and drain briefly. Transfer to a bowl and serve. (The salsa can be refrigerated in an airtight container for up to 2 days.)

Chicken Pasta with Creamy Tomato Sauce

Chicken Pasta with Creamy Tomato Sauce

12 oz box Pasta (penne, ziti, rigatoni or whatever)
1 lb chicken boneless skinless breast
2 egg whites, lightly beaten
1 cup finely grated Parmesan cheese
1cup Bread Crumbs
1 small onion, diced
2 garlic gloves, diced
4 TB butter
4 TB olive oil
1/2 c chicken broth
8 oz Tomato Sauce
1 cup heavy cream (or skim milk thickened with corn starch)
Fresh Parsley and Basil (to taste)
Salt and Pepper (to taste)

Cook pasta according to directions.

Mix bread crumbs and cheese. Dredge chicken breasts in egg and coat in bread crumb mixture. Heat 2 TB butter and 2 TB oil in skillet, brown both sides of chicken until juice runs clear. Set aside.
Instructions for sauce from The Pioneer Woman:
Finely dice one small onion. Mince two cloves of garlic. In a large skillet heat 2 tablespoons of butter and 2 tablespoons olive oil. Add the garlic and onion and sauté, stirring occasionally. After the garlic and onions have cooked a bit add your low-sodium chicken broth. Let the broth evaporate for a few minutes, stirring occasionally. Now add an 8-ounce can of plain tomato sauce. Stir well until combined. Then add 1 cup of heavy cream. Continue stirring. Turn heat down to low and let simmer. Now chop your herbs, about a tablespoon of chopped parsley and about the same amount of chopped basil, or if you’re feeling very proper, chiffonaded.

Mix sauce and pasta. Slice chicken in strips. Top pasta with chicken, serve.
